Chef James Furnish’s culinary passion began as soon as he was able to drag a chair to the kitchen counter and help his mother prepare nutritious home cooked meals. Born in the small fishing town of Astoria Oregon, locally caught seafood was a staple in the Furnish household. Learning to use and appreciate local ingredients from land and sea has been the foundation of his passion for cooking. At the age of twelve he officially began his culinary career at a local country club, washing dishes and prepping for the cooks. 15 years ago he brought his love of locally sourced ingredients to the island of Maui, working in restaurants that shared his ideology.
